IT’S SANDWICH TIME!

It’s quick to prepare and it’s delicious

… So who says sandwiches aren’t healthy? You can stuff them with lots of vitamins and freshness.
Leftover salad leaves in your fridge, left herbs – they all match perfectly for this delicious vegetarian sandwich.
On the photo I used baby spinach and romaine lettuce, thinly sliced garden radish and half an avocado. (Sprinkle the avocado slices with green lemon juice and spread fleur de sel and pepper.)
In the middle layer of the sanwich I decided for some slices of goat cheese.

For the bread just use your favourite bread, toasted or not, it depends on how you prefer it.

Prepare a sauce for making the sandwich more mellow. For the sandwich sauce here I chopped 1 garden radish and 1/2 small onion into very tiny cubes, added crème fraiche, some drops of spicy oil, lemon juice, salt and black pepper and mixed it all. I generously spread the sauce on the two halves of the bread and piled the veggies and the goat cheese slices.

For the photo I put the two halves together, but at the end I ate the sandwich divided. It felt more comfortable. I’m sure you know what I mean.
