… These are the very last days of white asparagus here – and I’m very late with this delicious recipe. I’m really sorry for the miserable timing! Nevertheless you might still have a few days left for trying this fresh and easy asparagus & strawberries salad. It is crunchy and soft, sweet and sour, fruity and salty and a little bit spicy… Do not try it with green asparagus, this won’t work.
Yummy! SALAD FOR 4 PERSONS
VEGETARIAN + GLUTEN FREE
500 g white or violet asparagus
250 g of deliciously sweet and ripe strawberries
juice of 1 lemon
1/2 bunch of chive
2 tblsp of native olive oil
2 teaspoons of liquid honey
1/2 teaspoon of fleur de sel
vanilla powder (out of a vanilla bean or you might already buy the vanilla powder)
13 For the vinaigrette pour all the ingredients for the asparagus & strawberries salad together in a salad bowl.
12 Bring water to boil in a pan.
11 Peel asparagus thoroughly and
10 cut into diagonal slices (about 7 mm thick)
9 Boil the slices for 1 minute.
8 Drain with cold water.
7 Add asparagus to the vinaigrette.
6 Mix well. (The asparagus needs some time to marinate.)
5 Cut chive into small rolls and
4 strawberries into thin slices.
3 Mix everything carefully in the salad bowl.
2 Add some seasoning and
1 some chilli flakes.
